The Absurdity of Running a Restaurant

Was this just someone trying to do performance art married to food and just lost his or her way? Or do you think something else was going on here? I have thought about this a lot. And I don't know that I have a definitive answer. But I think that he is very far removed from one of the key elements of what it is to run a restaurant. His entire argument is that food is art. And I disagree with that in that I think food is a lot more complicated than art. If you create a piece of art and someone hates it, then you as an artist have still succeeded in some way because you've provoked a reaction.
