When Alexi Carell was doing this, the idea of growing functioning tissue outside the body was total speculation. Winston Churchill thought we'd be eating lab-grown chicken by the 1980s. But actual scientists were intrigued by the idea that we could use these medical breakthroughs to grow food too.
