The Apple Watch Ultra action button has been left unchanged. You can't customize it anymore than you used to be able to. There's a new page to like, by default in the shortcuts app, you get your top three Apple Watch enabled shortcuts. And then there's a see all button that takes you into a list of all the other shortcuts that you have enabled for Apple Watch use.
