The Quantity vs. Quality Issue in Publishing

Publishers used to, as I understand it, build authors. They would publish books even if those books weren't finding a huge readership. And now somebody who's super talented is likely to get a rejection from the big five presses or whatever. That seems very problematic and sad to me.
