You need to give the cast iron pan time to heat up. Even i gaspe, you heat up cast iron in a sort of medium low heat for like 15 minutes? Well, because you'll have hot spots if you heat it up too fast. I would go medium low for a longer period o time. And then when you're cooking with it,of course, cast iron is not gat to adjust quickly becausei heavy. Just take it off the burner and move it to another burner quickly. That's one way to adjust it.
