Food Systems Are Helping People to Think in More Complex Ways
When we realise this concentration of grain and given the high import bills that many of the developing countries rely for 30 to 70% of the grain from Russia and Ukraine, you start to realise how public policies have shifted more towards imports. And it just shows the preferences of people and the aspirations towards achieving that. But on the other hand, many of those processed grains are really to cook or really... They do not need a huge amount of processing. So there's quite a considerable trade-off to consider in how much energy is needed to cook those staples.
