In a refugee camp in Uganda, Jarls met a South Sudanese mother whose determination and ingenuity with the little she had gave him new insights into the power of food. The dignity of food comes in controlling how it tastes, the flavor, the traditions, all those things are so important. It was in 2011 that Giles and members of an American regiment came under fire in Afghanistan. As they ran, Giles triggered an explosive device, which turned him from being someone documenting a war into one of its casualties.
