Menera and Zcash are two examples that come to mind as the first blockchains that started using zero-knowledge proofs as a privacy tool. And funnily enough, most of the roll-ups, Aztec, is the only exception currently. They don't use zero-knowledge Proofs because they're privacy preserving it; they use them because they have this interesting property called succinctness.
