The darker the roasts, the more the polyphenols are inactivated. I love dark roast coffee, but I quite frankly don't drink it anymore. I drink medium roast. We've got a dark roast out because so many people have been trained to enjoy dark roast coffee. That's because you can take coffee from anywhere in the world with any toxin level.
