Confidence Is Just a State of Mind
When i was working at craft, and i think i was in the weeds and was very nervous, marco conora comes up to me and goes, cang, it's just about confidence. That's the secret. Just got to be confident. And i've never forgot about that. But i've used that sort of same expression to other cooks, you just have to be confident I had no confidence. Confidence is just a state of mind. It's what you talk all the time, editing in your head on like a micro level. You're not hemming and hawing and you're waiting for this to happen or maybe this'll happen. The reason why i believe that
