Rejection Is a Good Thing
In english, apologizing is more just to be polite. It doesn't mean you've done something wrong. So sorry is a really useful word and don't think it means you've been guilty in some way. If they're a nice person, you say a good thing. And then rejection. For example, ah, i'd love to, i'd really love to, but i can't write now. I'm really sorry i can't do that right now. Maybe even give an excuse like why you can's do that.
