Brewers make wort and yeast make beer, but you need both. Different mash temperatures within the amylase act enzyme activity range have an objective impact on the constitution of the work that you make. Mash one at 146 F or 63 C. Mash the other one at 162 F or 72 C. Those different finishing gravities are going to mean there's a difference in alcohol level.
