Trans and Cis Double Bonds
Oil can be made a solid room temperature so that it can be used as a butter replacement, which we've all experienced as margarine. When hydrogenation takes place, sometimes it doesn't delete all the double bonds. So sometimes it can make the double bonds switch their forms or even migrate. That is trans fat. You hear about trans fats all the time and you never hear about cis fats but they're S-Y-S - Sis C-I-S.
