The Importance of Bench Fermentation in Brewing

The rub for us is really like I said it's that we're trying to eliminate bad stuff you know so allium that's a no-go. We've spent probably too much time trying to correlate with total oils or certain oil profile and have not been able to find those correlations which just means we still don't know enough. The things that will change or end up in a different place once they go through fermentation are some of the things you start to pay attention to when you're rubbing.
