The Importance of Ownership in Agile

How do big companies like AWS, Microsoft, GitHub know when to evolve their topology? Are they so mature that they're setting their ways? Or does a place like Google once a year sit down and have like a personal reflection time. I think it's much harder change, like organizations, as opposed to the certain processes that make up how we think about that sort of thing.
