Wok-h is not simply about lots of heat or lots of tossing. It's all about understanding what your ingredients are and how to use them. You can braise meat, steam vegetables, poach a fish or scramble some eggs. There are endless possibilities when it comes to the wok. I was going to ask if one of you guys would kindly teach me to get my wok technique on point but after that I'm afraid I'm going to have to try my hand with one of the masters at the Daipai dong.
