The Differentiating Factors of New Zealand Hops
New Zealand hops are more intense than those grown in the U.S., says Tom Zoellner. Part of that is because they're closer to the equator, so there's more ultraviolet light at 40 degrees south. They picked their Nelson-Soven later than other farms, for the most part; some were hanging super late. He also talks about picking dates and making sure you're picking hop at best maturity date possible.
