The Rise of the Gourmet Food Truck in the 21st Century

Korean tacos are an interesting choice and one that I think will sort of become dated in a sense as the book goes on, but not in a bad way because I do want it to tell the stories. The earliest kind of interest in Korean tacos comes from this kogi food truck which launches in 2008 on the streets of Los Angeles. It's this fusion food from neighborhoods Korean and Mexican foods. And so in that way I use them to tell the story of kind of this moment of embrace of different immigrant traditions and this long history of immigrant food ways.
