The reason we don't have conservation of energy in the real universe, you can explain from another's theorem is that we don't actually have time symmetry. This is what causes light to be redshifted over significant amounts of time. Redshift makes some amount of sense as like a Doppler effect on light. But things get a bit complicated if you looked at the entire universe at once. If you look at all the photons going through the universe at once, track them going in every direction, you'll see all the photons steadily getting redshift.
