We use on for continents. On becomes more specific though, so you're on a certain day, on a date. At is very specific and it's the smallest one. We'll also use at for locations like the beach. And if you walk out into the water, you're in the water. But yeah, there are no really, really, really broad obvious patterns. Some of these times, you just have to play with it and just get used to the collocations.
