Language has a very annoying habit, although I actually think it's intentional, of correlating with itself. So certain sounds tend to occur at certain positions in the word with a given likelihood. And then you also model, you've also got coding for boundaries between words, and then you've got these information theoretic measures like surprise on entropy and frequency.
