What was challenging was selling the book actually. There seems to be this divide that Western recipes are easy, quick weeknight, simple food, non-Western recipes can't be simple food. I think the concept you're describing is conflating unfamiliar with inaccessible almost. And that is a difficult habit or way of thinking to try to break and convince someone that those things just aren't the same.
